Summer Melon Salad
- 1 lb. Turkey Breast – cooked, skinless, cubed*
- 1 Cantaloupe – small, cubed or balled (or 1/2 Honeydew Melon – large)
- 1 lb Grapes – seedless, red or green separated
- 3 T Tarragon – fresh, chopped (or 1 1/2 tsp. dried)
- 1/3 c. White Wine
- 1 T Lemon Juice
- 1 1/4 c. Mayonnaise
- 1 tsp. Salt
- 1/2 tsp. White Pepper
- 1 T Anisette or Sambuca (optional)
- Lettuce or Radicchio Leaves
- Strawberries – fresh, sliced for garnish (optional)
Combine first four ingredients. Mix remaining ingredients for the dressing. Toss salad items lightly in dressing. Plate on lettuce or Radicchio leaves topped with fresh strawberries.
*Use left over, or ask deli counter for 1 lb turkey breast not sliced
